So, last week, I decided to try to make a fancy breakfast food known as the crepe. Dear goodness have I got a story to tell. It may have been the fact that I tried to make them with an egg substitute, or maybe I wasn’t leaving them in the pan long enough. But what I learned was the fact that crepes are NOT easy to make.

Why Did I Decide To Make Crepes?
In my adventures through adulthood, I decided learning how to cook was a good idea. Which, in my case, can be a little difficult considering I’m allergic to seemingly everything. But when my mom sent me a pin for gluten free crepes on Pinterest, I decided I’d try it out. I mean, what could go wrong? Right?
So, the night before, I read up on the ingredients, and mentally prepared myself to cook. I was going to get up early, have the ingredients ready, and have a full stomach ready to face the day by nine o’clock. Well, it didn’t exactly go that way.
The Beginning Of The Crepe Disaster
I grabbed the recipe, aka my phone, and got to work early Tuesday morning. Now, the recipe did call for eggs however, I’m allergic to those as well. So I decided to use club soda as an egg substitute. I did use this once before on banana muffins and they came out fine. But I’m now realizing there is a big difference between baking something and frying something.
I carried on with my plans, mixed the recipe, and plopped my first crepe into the pan. Now, I’m assuming that’s what you’re supposed to make them in. If I’m wrong, I’d love to read your suggestions in the comments below. After I put the batter in the pan I let it sit. And sit. And sit. Really I was afraid I was going to flip it and it was just going to fall apart. Well I had the opposite of that problem as you can see in the picture below.
Take Two For The Crepes!
Well, that didn’t go great. But nothing’s ever perfect on the first try right? So, on to the next crepe! This time, I knew I needed to watch how long I was leaving it. I needed to make sure I wasn’t letting it get burnt. I plopped the batter in, and waited anxiously for my next round in crepe creation.
The sides sizzled but the center bubbled. I could see the browning edges. I could feel how close it was to burning. But for some reason the thing just wasn’t cooking in the middle! So, I flipped it, and the entire center fell away. Second one down, and still no crepes to be eaten.
The making of a Gelatinous Mass
How many times was I willing to try this recipe? As many times as it took to get an edible crepe! So I continued plopping the batter in the pan, and flipping. Sometimes they broke in the middle, other times, I rolled them into dough balls. Another time I burnt it as well.
After about eight tries, I finally used up all of the batter, and still had no crepes to show for it. Some times it just happens that things don’t work out. And boy was that the case with these crepes. I won’t stop trying though. Eventually I will conquer these dumb things! And when I do, I’ll add a post on exactly how I managed it.

You’re so funny! Didn’t the recipe tell you to spread the thin batter all over the bottom of the pan? So did you go hungry? I do admire your tenacity though.
